A savory pie, perfect at any time of day, Spanish empanadas consist of rich fillings wrapped in a golden shell of pastry or bread. Individual sized empanadas are found across Spain, but in Galicia you’ll find large pies from which you order by the slice. Fillings are usually represented through naming, like in the case of empanadas de atun, full of generous amounts of tuna mixed with a thick sauce of tomato, veggies, garlic and seasonings. Other varieties have names which are more obscure like the empanada mixto, filled with ham and cheese. If you aren’t in the mood for meat, try an empanada with vegetarian filling like pisto or spinach and cheese.
