Typical of the Canary Islands but somewhat exotic on the mainland of Spain, papas arrugadas is one of the few Spanish dishes that has a bit of a kick to it. To prepare papas arrugadas, small Canarian potatoes are boiled in salted water until their skin becomes wrinkled and they are nice and tender. While the potatoes themselves aren’t spicy, they are served with a choice of sauces: mojo picon, mojo verde, or both. The mojo picon is a spicy red sauce flavored with paprika and hot Spanish peppers. Mojo verde is a green sauce with less heat but a serious bite of garlic and the flavors of fresh green herbs.
