A favorite of pork fans everywhere, porchetta is an entire pig cleaned out, rolled with herbs and roasted in a wood-burning oven or on a spit over many hours. The result is a crisp brown skin surrounding smooth and succulent meat. Porchetta is sold in most markets and grocery stores but in the spring throughout the regions of Tuscany, Lazio, Umbria, and Le Marche you will find town fairs dedicated to la porchetta. At these small festas, porchetta is sliced in front of you and crumbled into a crispy roll of bread so large it’s overwhelming. Despite the monstrous size of these sandwiches, after your first bite, you’ll see that only one won’t be possible be enough. At its most delicious when carved fresh, search through central Italy to find porchetta at its finest!

Florence: Da Nerbone is a humble little stand on the ground floor of the Mercato Centrale. Popular for their classic Tuscan dishes and great prices, you’ll know you’ve found it when you spot the line of people waiting patiently to place their order.

Rome: I Porchettoni, an inexpensive tavern known for their mouthwatering porchetta, among other things, is reputed to serve the best rendition of its namesake dish outside of Ariccia, the town where porchetta originated.
